The days are cold and grey and I feel all fuzzy inside. I mean this weather just makes you want to curl ul under a blanket and watch the notebook BUT it also brings along the sniffles. Here is the recipe for my onion tea not only is it great for building the immune system it also tastes good too. I mean like who doesnt like being healthy and having a party in their mouth at the same time. I would say thats a win, win! Luckily I grow most of the ingredients in my garden so its a quick trip outside. However all the ingredients are super easy to find in the grocery store as well.
Asia's Cold Fighter Immuni-Tea

Ingredients
2 key lime 1 red apple 1 red onion 7-10 cups water 1 cinnamon stick 1 bay leaf 3-4 sprigs of lemon thyme 2 inches of turmeric (chopped) 4 garlic cloves peeled and bruised 1 stalk of lemongrass 3 inches of ginger (chopped) 1 teaspoon honey I use Manuka you can replace with plant-based sweetener of your choice If your feeling fancy you can add cloves or star anise ( make sure your purchase star anise from a reputable grocer )
Instructions
Add water to a large pot over low heat. Cut the limes, red apple (remove seeds from apples ) and onion into four equal parts. (leave skin on the onion) Wash the lemongrass and peel its outermost skin. Squeeze lime juice into the water before adding all the ingredients to the pot. Set the heat to medium-low and let it boil slowly for 10-15 minutes. Let simmer for another 15-20 minutes (the longer, the better) I slow simmer until the apples are brown and sink to the bottom. Strain and sweeten
